Our breading did not come together very well, and it wasn’t very crispy and the breading fell off during deep frying. The flavors were still very good.
Ingredients
1 lb chicken (cubed), 1 cup buttermilk, 1/4 spicy seasoning (garlic powder, onion powder, sage, paprika, chilli powder, salt), egg wash, cornmeal, frying oil

1 | Marinade chicken in buttermilk and 1/2 of seasoning mix.
2 | Dredge chicken in flour, eggwash, and another layer of flour. The flour should be mixed with the rest of the seasoning mix and cornmeal.
3 | Fry chicken until crisp and cooked through and serve.

Tasted very, very good, maybe slightly too greasy from incorrect frying temperature.
Ingredients
1/2 eggplant sliced evenly, 1/2 cup flour, 1/2 cup corn flour, 4 T egg wash, vegetable oil, 1 lb red tomatoes, 1/2 lb onion chopped,

1 | Bread and fry eggplant.
2 | Roast tomatoes cut side down with onion and garlic in onion, remove burnt skins from tomatoes and roughly blend roasted vegetables into a sauce.
3 | Serve
